
One of the most intriguing wines at this year’s
Terres et Vins tasting was
Benoît Lahaye’s new
sans soufre cuvée, Violaine. There are several producers who have made champagnes entirely without the addition of sulfur, most notably
Drappier,
Jacques Selosse and
Pascal Doquet, and since 2008, Lahaye has been experimenting with doing the same.
