• An old barrel at Champagne Alexandre Filaine, Damery

    Visiting Fabrice Gass at his cellars in Damery is almost like stepping into a time machine. There seems to be little here that would feel out of place in the early twentieth century, or perhaps even the late nineteenth, from the old tools to the dusty, traditional bottles and the venerable oak barrels.

    Those barrels, in fact, are practically museum pieces in themselves: sourced from Bollinger, where Gass works as a winemaker, they date from 1937, and today they remain in continuous use, carefully preserved and cared for.
